We are seeking a highly motivated doctoral researcher to join the project “Microbial Transformation of Fungal Proteins Towards Targeted Techno-Functionality for Next-Gen Sustainable Foods”. The project is funded by the Novo Nordisk Foundation and led by Dr. Yaqin Wang at the Department of Food and Nutrition, University of Helsinki.The aim of this research is to connect advances in mycoprotein production with their techno-functional performance in food applications, ultimately supporting the development of sustainable food ingredients. We will employ fermentation-based bioprocessing to modify commercially important mycoproteins using our extensively characterized food-fermenting microbes. The modified proteins will then be tested in model food systems to evaluate their functionality.As a doctoral researcher, you will apply a range of analytical techniques, including HPLC, GC, SEC, FTIR, FE-SEM, and rheometer to characterize the chemical, rheological, and textural properties of mycoproteins and the resulting food products. You will also learn to analyze peptidomics data to understand and optimize structural changes in proteins following bioprocessing.Skills, expertise and/or qualificationsThe candidate is expected to have:

  • A master’s degree in food sciences, biotechnology, or a closely related field, with a focus on protein structural analysis and/or bioprocessing.
  • Knowledge of laboratory practices in chemical, rheological, and textural analytical methods.
  • Excellent written and verbal communication skills in English.
  • Strong motivation to conduct high-quality research, publish in peer-reviewed journals, and complete a doctoral degree.

The following are considered advantageous:

  • Experience in data analysis and visualization, particularly with statistical methods applied to omics datasets.
  • An open and outgoing personality, with strong interpersonal skills that support clear communication and smooth collaboration with academic and industry partners.

The duties of the Doctoral Researcher include conducting research in the project framework with the aim of achieving doctoral degree in accordance with the degree requirements of the University of Helsinki. The appointee will also participate in supervision of undergraduate students and teaching within the department. The teaching duties will cover ca. 5 % of the total working hours.Contract and salaryThe salary is defined in accordance with the University’s salary system for teaching and research personnel. The starting salary is approximately 2500 euros/month and will increase as the PhD work progresses, based on the appointee’s qualifications and experience. The initial appointment is for three years, with expected continuation up to four years depending on the progress of the work. The preferred starting date is September 2025. The position will be filled as soon as possible, or as agreed with the selected candidate. Successful candidate is expected to work full-time.
