Excel Recruitment is seeking a dynamic and experienced Head Chef to lead a busy Italian restaurant kitchen in North Dublin. This role suits a hands-on chef who thrives in a fast-paced setting and is passionate about fresh, seasonal food. Strong leadership and experience in high-volume kitchens are essential.The position is 5 days over 7, with mainly daytime hours and no late nights, offering a great work-life balance.Benefits of the Head Chef role

Responsibilities of the Head Chef

• Lead and manage day-to-day kitchen operations, ensuring efficient service and smooth team coordination
• Plan, cost, and execute menus with a strong emphasis on Italian and Mediterranean cuisine
• Maintain consistently high food quality, presentation, and hygiene standards
• Drive food innovation and seasonal menu changes in line with business objectives
• Monitor and manage food and labour costs in line with set budgets
• Maintain accurate stock control, ordering, and waste tracking
• Ensure full compliance with food safety, health and safety, and HACCP procedures
• Mentor, train, and develop the kitchen team, conducting regular performance reviews
• Ensure the kitchen is audit-ready at all times and take ownership of food safety documentation
• Work closely with the management team to support overall restaurant standards and customer satisfaction

Requirements of the Head Chef

• Previous experience as a Head Chef or Senior Sous Chef in a fast-paced kitchen
• Strong background in Italian or Mediterranean cuisine
• Proven experience managing food margins and controlling costs
• Excellent knowledge of food safety systems and allergen compliance
• Confident leader with strong communication and team development skills
• A passion for food and a genuine interest in delivering a memorable customer experience
• Flexible to work evenings and weekends as required
